Coffee Cake

Coffee Cake



For the base
2.25 Cups Bisquick
1/4 Cup sugar

Stir together.

Add
1 Egg
1 Cup milk

Mix well and put in a greased cake pan (I use 9X13 pan)

Topping
1 Cup Sugar
1 teaspoon cinnamon
1/3 Cup flour (or just more bisquick to make it easier)

mix these in a separate bowl or in the one you just poured your base out of.
once it is all a uniform color Then cut in 6 or 7 Tablespoons of semi firm butter (1 stick is 8 Tablespoons)
I use a fork and push down on the butter as I stir it into the topping mix.  And I think I stir it longer than most until all the loose sugar cinnamon is kindof uniform.  Youll see the difference beween the mix with butter and without.  I mix until it is all consistent and then speak it over the top of the base in the baking pan.  But if you don't mix for a long time and there is still some kinda loose sugar cinnamon in the bowl when you're spreading it on that's fine it will just look a little different when it's finished.  That's how my mom made it when I was growing up... I prefer just to keep mixing... but its butter and sugar cinnamon, you're not gonna mess it up.

Preheat oven to 375 and bake it for 17 Min.

Chocolate cake

Ingredients
1 Devil’s Food cake mix
1 8oz. package cream cheese, softened
2/3 c. brown sugar
1 tsp. vanilla
2 c. whipping cream, whipped
1 bag milk chocolate chips, grated

Bake cake in two 9” pans.
Remove from oven and cool in freezer or refrigerator.
Beat cream cheese, brown sugar, and vanilla until very fluffy.
Mix in whipped cream.
Cut each cake layer in half to make four layers.
Place one layer onto a large plate.
Spread a fourth of the cream mixture on top. 
Sprinkle with a fourth of the grated chocolate chips.
Repeat with each of the layers.

Cover and refrigerate for 8 hours or overnight.

Cheesecake

Crust
1/3 c. powdered sugar
1 1/2 c. graham cracker crumbs
1/2 c. margarine, melted

Mix together and pat into a 9” spring-form pan.

Cheesecake
3-8 oz. packages cream cheese at room temperature
1 tsp. vanilla
1 c. granulated sugar
4 eggs at room temperature

1 pint sour cream
5 tbsp. sugar


Beat cream cheese, sugar, and vanilla.  Add eggs one at a time, mixing very well between eggs.  Bake at 350⁰F for 50 minutes.  Remove from oven.  Stir together sour cream and sugar.  Spread sour cream-sugar mixture on top.  Put back into the oven and bake for an additional 5 minutes.  Refrigerate overnight.

Banana Bread

Everyone loves banana bread and this is a great recipe for really moist and sweet banana bread.

1/2 c. shortening
1 c.  sugar
2 eggs unbeaten
1/4c buttermilk
1 2/3 c. flour
1 tsp. soda
1/2 tsp. vanilla
1/2 tsp. salt
1/2 tsp. baking powder
3 large mashed bananas ( the riper the better, you can even freeze them to turn them black)

mix bananas, shortening, sugar, eggs, milk, vanilla and salt in a large mixing bowl.  Add baking powder, soda, and flour in that order to banana slurry.

dough will be sticky, just pour into pre-greased pans and bake!

I usually double this recipe and get 3 regular sized loaves

Bakes at 325 degrees for about an hour

Cornflake Treats

1 c white sugar
1 c corn syrup (karo)
bring to a boil

add:
2 c peanut butter
stir till consistent and take of head

add:
5-6 c cornflakes

spread in cake pan

put 3/4 bag of semi sweet chocolate chips over the top place in a warm oven until chocolate chips are melty.  Spread chips with a knife or spatula.  Let cool and enjoy.

Maple syrup

1 cup light karo syrup
1/2 cup brown sugar
1/4 cup water
a couple drops of maple flavoring....

bring all ingredients to a boil.  Take off heat immediately  Let cool.  Enjoy.
